These fluffy egg bites are baked to perfection — high-protein, low-fuss, and totally customizable. Add your favorite mix-ins like cheese, bacon, or veggies for an easy grab-and-go breakfast.

My go-to kitchen tools for these: Immersion blender, silicone muffin pan, and a cooling rack for perfect texture.

Ingredients

  • 9 large eggs
  • 1 ½ cups cottage cheese
  • Salt & pepper, to taste
  • 1 cup mix-ins (cheese, bacon, sausage, spinach, etc.)

Instructions

  1. Preheat oven to 350°F and grease a muffin tin.
  2. Blend together eggs, cottage cheese, salt, and pepper until smooth.
  3. Add mix-ins to muffin cups, then pour egg mixture on top.
  4. Place a baking dish with boiling water on the oven’s bottom rack (keeps muffins fluffy).
  5. Bake on middle rack for 25 minutes, or until set. Let cool before removing.
  • Store in the fridge for up to 4 days or freeze for up to 2 months.
  • Reheat in the microwave (30–45 sec from fridge, 1 min per side from frozen) or air fryer (350°F for 2–4 min).
  • Customize mix-ins with your favorite cheeses, meats, or veggies.
