These fluffy egg bites are baked to perfection — high-protein, low-fuss, and totally customizable. Add your favorite mix-ins like cheese, bacon, or veggies for an easy grab-and-go breakfast.

Ingredients
- 9 large eggs
- 1 ½ cups cottage cheese
- Salt & pepper, to taste
- 1 cup mix-ins (cheese, bacon, sausage, spinach, etc.)
Instructions
- Preheat oven to 350°F and grease a muffin tin.
- Blend together eggs, cottage cheese, salt, and pepper until smooth.
- Add mix-ins to muffin cups, then pour egg mixture on top.
- Place a baking dish with boiling water on the oven’s bottom rack (keeps muffins fluffy).
- Bake on middle rack for 25 minutes, or until set. Let cool before removing.
- Store in the fridge for up to 4 days or freeze for up to 2 months.
- Reheat in the microwave (30–45 sec from fridge, 1 min per side from frozen) or air fryer (350°F for 2–4 min).
- Customize mix-ins with your favorite cheeses, meats, or veggies.
