- ½ cup plain Greek yogurt
- ¾ cup whole milk
- 1¼ cups GF pancake mix
- 1 large egg
- Mini chocolate chips, to taste (start with ¼ cup)
Directions
- Preheat waffle iron (or pancake griddle) to medium-high.
- In a large bowl, whisk the egg until foamy.
- Add yogurt, milk, and pancake mix; stir just until combined—small lumps keep waffles fluffy.
- Fold in mini chocolate chips.
- Pour about ½ cup batter into waffle iron (adjust for your iron size) and cook until steam subsides and waffle is golden, ~5 minutes.
- Repeat with remaining batter, keeping cooked waffles warm on a rack in a 200°F (95°C) oven if needed.
No waffle iron? Batter works perfectly for pancakes—cook 2 minutes per side on a buttered skillet.
