Ingredients

  • ¼ cup + 1 tbsp water, divided
  • 1 tbsp unflavored beef gelatin
  • 1 cup diced mango (fresh or thawed frozen)
  • ¼ cup blended and strained watermelon
  • ½ tbsp fresh lemon juice
  • 1 tbsp honey

Directions

  1. In a small bowl, sprinkle gelatin over ¼ cup water. Let bloom while you prep the fruit.
  2. Combine mango, remaining ½ tbsp water, lemon juice, and honey in a small saucepan. Simmer over medium-low heat for about 10 minutes until mango softens. Cool slightly, then blend until smooth.
  3. Blend watermelon separately, measure out ¼ cup purée, and strain to remove pulp.
  4. Return mango purée and strained watermelon to the saucepan over medium-low heat. Add bloomed gelatin and whisk until fully dissolved and mixture is silky (1–2 minutes).
  5. Using a dropper or spoon, fill silicone molds or ice-cube trays.
  6. Freeze for 25 minutes, or chill in the fridge for 1 hour, until firm. Pop out of molds and store in an airtight container in the fridge (1 week) or freezer (1 month).

Flavor Swaps: Replace mango with strawberries, peaches, or kiwi—just keep total fruit purée around 1 cup.

Sweetness Tip: If your watermelon is super ripe, skip the honey.

Vegan Option: Use agar-agar instead of gelatin (texture will be firmer and less chewy).
